Fried Southwestern Rolls

Egg Roll Wrappers or Flour Tortilla
1-2 Cups grilled chicken, chopped into small bite size pieces.
1 16 oz. can Black beans
1 Onion chopped
Bunch Cilantro chopped
1/2 - 1 16oz. can Corn
1/4 Cup Jalapeno jack cheese, shredded
1 Red Bell pepper chopped
Large Handful Spinach chopped
1 T Cumin (I typically add more in the end)

View full recipeCombine black beans, corn, onion, cilantro, red pepper & spinach in medium sauce pan. On medium heat stir until spinach has wilted. Add cumin & grilled chicken. Throw in cheese and mix until melted.
Once combined spoon mixture into tortillas wrapping them tightly so they do not leak. You can fry or bake these depending on how healthy you want to be. I lightly brush olive oil on the top and sprinkle with cheese. Bake @ 350 for about 30 minutes or fry until golden brown.

Serve with avocado-ranch dressing

This is a great meal served with a side of rice and a salad or use it as a fun appetizer at a party. Cut in half and dip in dressing. Has a spicy kick! You can use as little or as much cheese you would like depending on the spiciness you desire.

Great to throw in the freezer.
